This is a super simple lasagna recipe – it has no Béchamel sauce and a no cook tomato sauce – but it is creamy and delicious.

The recipe needs 3 cups of veg excluding the onion, these can be replaced with seasonal veg of your choice.  We love adding broccoli and butternut is a good alternative to the carrots.  The tomato sauce can be replaced with your favourite recipe, this is just a quick one for busy nights, or with a store bought Marinara Sauce.

This recipe is easily converted into a chicken lasagna.  I panfry breast fillets in a little butter and shred them into the veggie mix.

Freeze before cooking and defrost before baking.
