This is actually a detox soup, but it is so comforting that it is a regular on our menu. We call it leftover soup because it lends itself so well to adding meat that we often pop leftovers into it. We have used pulled chicken, lamb and pork leftover from roasts and all of them are delicious.
It is best to freeze or can this soup before adding the lemon juice, spinach and milk or cream. It can store on shelf for 2 years if canned which is much more cost effective than freezing for all that time.
I have added pics in the comments. Laurence loves a little more heat on his soup so slices jalapenos and red onion as a garnish, I prefer just the cooling flavours of the yoghurt and coriander.
